Ingredients
250gm Chicken breast
1Onion, chopped
1 tsp Chili powder
1 tsp Ground coriander
1 tsp Chopped garlic
1 tbsp Sugar
1 tbsp Vegetable oil
1 tbsp Soya (soy) sauce
1 tbsp Lemon juice
1 tsp Fish sauce
Sauce
1 cup Coconut milk
100gm Crunchy peanut butter
1tbsp Fish sauce
1tsp Lemon juice
Salt and pepper to taste.
Method
1. Cut chicken into thin strips and place in a bowl.
2. Place all marinade ingredients in a food processor or chopper. Process well.
3. Pour the marinade over the meat and stir well to combine. Marinate for 2 hours or preferably overnight.
4. Remove the meat from the marinade and thread meat onto the wooden skewers. Grill the satay in a hot plate/grill, turning and brushing occasionally with the marinade.
5. Cook for 10 minutes or until done.
6. Serve with peanut sauce.
Sauce
Mix all the ingredients and bring to boil over low heat. Cook for 3-5 minutes. Season to taste and remove.
