INGREDIENTS
1kg Chicken
60ml Oil
150ml Chicken stock
225gm tomatoes
225gm capsicum
60gm Mushrooms
30gm Butter
To taste salt and pepper
Method
1. Clean and cut the chicken. Season with salt and pepper.
2. Cut the capsicum into chunks. Slice mushroom and chopped the tomatoes.
3. Heat oil and sauté pieces of chicken.
4. Add stock and add chopped tomato. Cover and cook gently till chicken is tender. Check for seasoning.
5. Grill the capsicum and mushroom. Add to the chicken dish.

Garnish with remaining tomato chopped and tossed in hot butter.
