POACHED SALMON

INGREDIENTS
1kg Salmon 
60gm Onion
60gm Carrot 
1no Bay leaf
1tbsp Vinegar
6 Pepper corn
1 small bunch coriander 
1ltr water
Salt to taste
Method 
1. Clean the fish by scrape off scale using the back of the knife. Remove gills and lean out head. Remove intestine and clear blood from backbone.
2. Slice onion and carrot. Cut the salmon into desired size.
3. Prepare Courte bouillon by simmering all ingredients except salmon together for 30-40 minutes. Strain and cool.
4. Place the salmon in a sauce pan. Cover with cold Courte bouillon.
5. Bring to boil slowly,skim and simmer gently.
