BRINJAL RAITA

INGREDIENTS
115gm brinjal
100gm curds
5gm chili powder
A pinch garam masala
A pinch cumin powder
Salt to taste
To temper:
A pinch mustard seeds
3-4 red whole chilis
15ml oil
Method:
1. Place brinjal on live coals or grill and roast, turning frequently.
2. When skin turn black and the brinjal is soft inside, remove and peel
3. Mash well and add beaten curds. Add salt and spices and mix
4. Heat oil. Add mustard seeds and whole red chilies. When the seeds crackle, pour over brinjal mixture, and mix well.
