GRILL SHRIMP AND CUCUMBER SALAD

INGREDIENTS
12 large shrimp
2 cucumbers
1 fresh red chilli
2 garlic cloves
1 tbsp fish sauce
1 tsp fresh lime juice
1 tsp rice wine vinegar
½ tsp sugar
1 tbsp chopped mint
Method

1.    Peel and devein the shrimp, minced the red chilli and garlic, deseed the cucumber and cut into julienne strips.
2.    In a griller line the rack with aluminium foil and lightly oil. Spread the shrimp on the foil and brush with oil. Grill for 2–3 minutes or until the shrimp turn opaque.
3.    Whisk the fish sauce, lime juice, vinegar, sugar, chilli, garlic, and a tbsp cold water together in a bowl until the sugar dissolves.
4.    Add the shrimp to the bowl and stir. Let stand until cooled.
5.    Add the cucumber and chopped mint, and toss together. Transfer the salad to a serving platter, and arrange the shrimp on top.
6.    Garnish with the mint sprigs and serve at once.
