MEATBALL SOUP

 INGREDIENTS

200 gm minced beef 
150gm carrot
100gm onion
10gm ginger
50gm bread crumbs
50gm pasta
50gm tomato puree
1 egg
1 litre chicken stock
2tbsp grated cheese
2tbsp chopped coriander
½ tsp dried oregano
½ tsp ground black pepper
Salt to taste
Oil to fry
Method
1. Wash and cut the carrot, finely chop ginger and onion.
2. In a large bowl combine eggs, onion, ginger, bread crumbs, cheese, coriander and salt.
3. Add minced beef and shape into balls.
4. Heat oil in a pan and fry the meat balls until brown on all sides. Remove and drain excess oil.
5. In a heavy bottom pan pour the chicken stock; add carrot, dried oregano, tomato puree, salt and pepper. Bring to boil.
6. Gently add the meatballs, cover and cook on low-heat for half an hour.
7. Add the pasta and cook for about 10 minutes. Garnish with coriander/fresh oregano.
