4 medium size potatoes

2tbsp extra-virgin olive oil

1tsp rosemary 

3cloves garlic, minced

Freshly ground black pepper

Few sprig of parsley/coriander

1. Preheat oven to230°C. Peel and cut the potatoes into desired size. 
2. Heat water in a large pot with salt and baking soda,
3. Add the potatoes and cook until the potato is half cooked. Remove the potato and set aside.
4. Combine olive oil with rosemary, garlic, and a few grinds of black pepper in a small pan and heat over medium heat.
5. Cook, stirring continuously until garlic turn golden for about 3 minutes.
6. Strain the oil through a fine-mesh strainer. Keep the garlic/rosemary mixture aside.
7. Transfer the potatoes to bowl with infused oil, season to taste and toss to coat.
8. In a baking tray spread the potatoes evenly and roast in the oven for 20 minutes or until potatoes are deep brown and crisp all over.
9. Transfer potatoes to a large bowl and add garlic/rosemary mixture. Add chopped parsley. Toss to coat and season with more salt and pepper to taste.
