750gm boneless beef
5-6 garlic cloves
2 onions 
2 inch piece ginger
1 tsp ground Coriander
1/2 teaspoon Cumin
1tbsp red paste
2 lemon Grass stalks
1 cup Coconut Milk
2 kaffir Lime leaves or Bay leaves
2 tbsp fish sauce
2tbsp oil
Salt, to taste
1. In a food processor, grind the garlic, onions, half of ginger, coriander, cumin, red Chilli paste to a smooth paste. Set aside.
2. In a heavy bottomed pot, heat oil and fry the beef in batches until brown on all sides. Set aside.
3. In the remaining oil, saute the lemon grass and sliced ginger for about 1 minute. 
4. Add the spice paste and cook for about 2-3 minutes stirring occasionally.
5. Add the beef back and coat with the paste. Pour in the coconut milk and add kaffir lime or Bay leaves.
6. Let it simmer in low flame until the beef is tender about one hour. Add water if required.
7. Add fish sauce when all the water evaporates. Check for seasoning and serve with steamed rice.
