
A skill development training programme on home scale preservation of fruits, vegetables and spices was held at SHN Green Park here on Wednesday organized by the department of Horticulture.
In the programme, technical session on preservation of fruits and vegetables (theory) was conducted by SASRD associate professor, Dr. Chandan Maitei as resource person, where he highlighted about the importance of preservation.
Maitei mentioned that food preservation can be achieved by three main methods as inactivation of microorganisms and/or enzymes, inhibition of microbial growth or deterioration of quality and avoidance of recontamination of food at all steps from pre- to post-harvest continuum.
Meanwhile, practical session on preservation of fruits and vegetables was conducted by assistant horticulture officer, Dimapur, Debbie where she demonstrated on making pineapple juice.
Altogether, 30 participants attended the training programme.
Earlier, keynote address was delivered by District Horticulture Officer (DHO) Dimapur, Temsu Longkumer, who also chaired the programme.
Later, vote of thanks was delivered by horticulture officer, Dimapur Aoimrong.
